The recipe highlights techniques for a light texture and uses ingredients available in local Naxos stores.

A recipe for a classic crescent-shaped omelet by chef Nena Ismyrnoglou, published in Gastronomos magazine, recommends using fresh eggs from Ptinotrofiki Naxou. The preparation focuses on careful cooking over low heat and vigorous whisking of ingredients.

To prepare a single portion, 3 eggs, 50 ml of fresh milk or heavy cream (or alternatively 1 tablespoon of vinegar for a lighter result), 25 grams of cow's butter, salt, and pepper are required. The ingredients are beaten for 5 to 6 minutes and then cooked gently in a non-stick pan for 2 to 3 minutes, before folding the omelet while the inside remains slightly runny.

All necessary ingredients, including local eggs, dairy products, cheeses, and herbs, are available at the My Market store in Naxos.
